Ingredients
  

For the Chicken
  • 2 large boneless, skinless chicken breasts
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
For the Pasta
  • 8 oz fettuccine
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1.5 cups heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup chicken broth
  • 0.5 cup red bell pepper, diced
  • 0.5 cup green bell pepper, diced
  • 0.5 cup onion, diced
  • 1 tsp Cajun seasoning or to taste
  • salt to taste
  • black pepper to taste
Garnish (Optional)
  • 2 tbsp fresh parsley, chopped

Method
 

Chicken Preparation
  1. Cut chicken breasts into 1-inch pieces, season with Cajun seasoning, and cook in olive oil until browned and cooked through, then set aside.
Pasta and Sauce
  1. Cook fettuccine according to package directions, then in a large skillet, melt butter and sauté garlic, bell peppers, and onion until softened.
  2. Stir in chicken broth, heavy cream, and Cajun seasoning, bringing to a simmer, then add Parmesan cheese and stir until melted and smooth.
  3. Add the cooked chicken and pasta to the sauce, tossing to combine, and season with salt and pepper to taste.
Serving
  1. Garnish with fresh parsley if desired and serve hot.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce. You can also substitute shrimp for chicken for a seafood variation.
