- Preheat your grill to medium-high heat. Remove the husks and silk from the corn cobs.
- Lightly brush the corn cobs with olive oil and sprinkle with salt and pepper.
- Place the corn on the preheated grill. Grill for 10-15 minutes, turning occasionally, until kernels are tender and slightly charred.
- While corn is grilling, prepare the topping. In a small bowl, mix mayonnaise, crumbled Cotija cheese, chili powder, and chopped cilantro.
- Once grilled, remove the corn from the grill. Spread the mayonnaise mixture evenly over each cob.
- Serve immediately with lime wedges.
Notes
For extra flavor, try adding a dash of smoked paprika to the mayonnaise mixture. If Cotija cheese is unavailable, you can substitute with grated Parmesan cheese or feta.
