Preparation
- Pat the beef dry with paper towels, then toss it with flour, salt, and pepper in a large bowl to coat.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Sear the beef in batches until browned on all sides, then remove the beef and set aside.
- Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Return the beef to the pot, then pour in beef broth, scraping up any browned bits from the bottom.
- Stir in tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
- Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is tender.
Final Steps
- Add diced potatoes to the stew and continue to cook for 20-30 minutes, or until the potatoes are tender.
- Remove the bay leaves before serving.
- Taste and adjust seasonings as needed.
Notes
For a thicker stew, you can mix a tablespoon of cornstarch with a tablespoon of cold water and stir it into the simmering stew during the last 10 minutes of cooking.
