Preparation
  1. Cook orzo according to package directions until al dente; drain and rinse with cold water, then transfer to a large bowl.
  2. In a small bowl, whisk together the olive oil and lemon juice until well combined to create the dressing.
Assembly
  1. Add cherry tomatoes, diced cucumber, thinly sliced red onion, and crumbled feta cheese to the bowl with the cooked orzo.
  2. Pour the dressing over the orzo mixture, tossing gently to ensure all ingredients are well coated and combined.
  3. Serve immediately, or chill in the refrigerator for at least 15 minutes before serving for enhanced flavor.

Notes

For an extra touch of freshness, add some chopped fresh basil or mint. You can also customize this salad with other summer vegetables like bell peppers or zucchini. This salad is great for meal prep and can be stored in the refrigerator for up to 3 days.
