- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced carrot, celery, and onion, then sauté for 5-7 minutes until softened.

Cooking
- Add rinsed red lentils, vegetable broth, and canned diced tomatoes to the pot. Bring the mixture to a boil.

Notes
