Preparation
- Preheat your oven to 400°F (200°C) and pat the chicken dry with paper towels.
Cooking
- Rub the chicken with olive oil, then season generously with salt and pepper.
- Stuff the chicken cavity with lemon slices, rosemary, thyme, and smashed garlic cloves.
- Roast for 5 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Resting
- Remove the chicken from the oven, tent it with foil, and let it rest for 5-10 minutes before carving and serving.
Notes
For extra crispy skin, try basting the chicken with its own juices during the last few minutes of roasting.
