Jalapeño Poppers

  • 12 medium jalapeños
  • 8 ounces cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1 cup bread crumbs
  • 2 large egg
  • 0.5 cup all-purpose flour
  • 2 cups vegetable oil for frying or baking

Method
 

Preparation
  1. Carefully halve each jalapeño lengthwise and remove seeds and membranes, then set aside.
  2. In a bowl, combine cream cheese and shredded cheddar cheese until well mixed.
  3. Spoon the cheese mixture into each jalapeño half, ensuring they are evenly filled.
Breading & Cooking
  1. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  2. Dip each filled jalapeño first in flour, then in egg, and finally coat thoroughly with breadcrumbs.
  3. To fry, heat vegetable oil in a deep pan to 350°F (175°C) and cook poppers for 2-3 minutes until golden; for baking, place on a baking sheet and bake at 400°F (200°C) for 20-25 minutes.

Notes

For a milder popper, remove all seeds and membranes from the jalapeños before filling. You can also experiment with different types of cheese or add in cooked bacon bits for extra flavor.
