Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Cut the bell peppers in half lengthwise and remove the seeds and membranes, then set them aside.
- In a large skillet, brown the ground beef over medium heat, draining any excess fat.
- Add the chopped onion and minced garlic to the skillet with the beef and cook until softened, about 3-5 minutes.
- Stir in the cooked rice, diced tomatoes, half of the shredded cheese, Italian seasoning, salt, and pepper into the beef mixture.
- Spoon the mixture evenly into each bell pepper half, then place the stuffed peppers in the prepared baking dish.
- Pour the tomato sauce over the stuffed bell peppers and cover the baking dish with foil.
Baking
- Bake for 30 minutes, then remove the foil.
- Sprinkle the remaining shredded cheese over the peppers and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Let the stuffed bell peppers rest for a few minutes before serving.
Notes
For a vegetarian option, substitute ground beef with plant-based ground meat or a mixture of quinoa and black beans. You can also experiment with different cheeses like mozzarella or provolone for varied flavors.
