  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes, then set them aside.
  3. In a large skillet, brown the ground beef over medium heat, draining any excess fat.
  4. Add the chopped onion and minced garlic to the skillet with the beef and cook until softened, about 3-5 minutes.
  5. Stir in the cooked rice, diced tomatoes, half of the shredded cheese, Italian seasoning, salt, and pepper into the beef mixture.
  6. Spoon the mixture evenly into each bell pepper half, then place the stuffed peppers in the prepared baking dish.
  7. Pour the tomato sauce over the stuffed bell peppers and cover the baking dish with foil.
Baking
  1. Bake for 30 minutes, then remove the foil.
  2. Sprinkle the remaining shredded cheese over the peppers and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  3. Let the stuffed bell peppers rest for a few minutes before serving.

Notes

For a vegetarian option, substitute ground beef with plant-based ground meat or a mixture of quinoa and black beans. You can also experiment with different cheeses like mozzarella or provolone for varied flavors.
