Ingredients

Main
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold butter
  • 3/4 cup milk

Equipment

  • Large bowl
  • Whisk
  • Pastry blender (optional)
  • Baking sheet
  • Biscuit cutter or glass

Method

Preparation
  1. Preheat your oven to 450°F (230°C) and lightly grease a baking sheet.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Cut the cold butter into small pieces and add it to the flour mixture, then use your fingers or a pastry blender to work the butter into the flour until the mixture resembles coarse crumbs.
Baking
  1. Gradually add the milk to the flour mixture, stirring until just combined to form a soft dough.
  2. Turn the dough out onto a lightly floured surface and gently pat it to about 1/2-inch thickness; do not overwork the dough.
  3. Use a biscuit cutter or a floured glass to cut out biscuits, then place them on the prepared baking sheet.
  4. Bake for 5-7 minutes, or until the biscuits are golden brown on top and cooked through; serve warm.

Notes

For extra flaky biscuits, make sure your butter is very cold. You can also brush the tops of the biscuits with a little melted butter before baking for a golden finish.
