  • 2 lbs potatoes peeled and quartered
  • 1 lb carrots peeled and roughly chopped
  • 1 onion large, quartered
  • 2 tbsp olive oil
  • salt to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a roasting pan by lightly greasing it.
  2. Pat the whole chicken dry with paper towels to ensure a crispy skin, then season it generously inside and out with salt and black pepper.
Roasting
  1. In the prepared roasting pan, toss the quartered potatoes, chopped carrots, and quartered onion with olive oil, salt, and pepper.
  2. Place the seasoned chicken directly on top of the vegetables in the roasting pan.
  3. Roast for 60-90 minutes, or until the chicken's internal temperature reaches 165°F (74°C) and the vegetables are tender and caramelized.
Rest and Serve
  1. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving; this allows the juices to redistribute, ensuring a more tender and flavorful bird.
  2. Carve the chicken and serve it alongside the roasted vegetables.
