Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, cream together the peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg until well combined.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Drop three rounded tablespoons of dough onto the prepared baking sheet, spacing them evenly.
  2. Use a fork to create a criss-cross pattern on top of each cookie.
  3. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
Cooling
  1. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra peanut butter flavor, you can add a tablespoon of chopped peanuts to the dough.
