- In a large bowl, combine the cubed butternut squash, chicken breast, halved Brussels sprouts, olive oil, dried thyme, dried rosemary, salt, and black pepper; toss until everything is evenly coated.
Cooking
- Spread the seasoned mixture in a single layer on the prepared baking sheet.
- Roast for 20 minutes, then pour the apple cider over the mixture and gently toss.
- Return to the oven and continue roasting for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
