  • 1 medium Butternut squash peeled and cubed
  • 2 lbs Chicken breast boneless, skinless, cubed
  • 1.5 lbs Brussels sprouts halved
  • 1 cup Apple cider
  • 2 tbsp Olive oil
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper.
  2. In a large bowl, combine the cubed butternut squash, chicken breast, halved Brussels sprouts, olive oil, dried thyme, dried rosemary, salt, and black pepper; toss until everything is evenly coated.
Cooking
  1. Spread the seasoned mixture in a single layer on the prepared baking sheet.
  2. Roast for 20 minutes, then pour the apple cider over the mixture and gently toss.
  3. Return to the oven and continue roasting for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
Serving
  1. Serve warm as a complete meal or alongside a light grain like quinoa or wild rice.

Notes

Feel free to add other root vegetables like sweet potatoes or carrots. For a vegetarian option, substitute chicken with chickpeas or firm tofu. Garnish with fresh parsley before serving for added freshness.
