Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless, skinless chicken breasts
  • 0.25 cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Bowls
  • 3 cups cooked quinoa or rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted and halved
  • 0.5 cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped
Lemon-Herb Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Marinate Chicken
  1. Cut chicken into 1-inch pieces and combine with lemon juice, olive oil, oregano, garlic powder, salt, and pepper in a bowl. Cover and marinate for at least 30 minutes in the refrigerator.
Cook Chicken
  1. Heat a large skillet over medium-high heat with a tablespoon of olive oil. Add the marinated chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
Prepare Dressing
  1. Whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper in a small bowl until well combined.
Assemble Bowls
  1. Divide the cooked quinoa or rice among three bowls. Top with cooked chicken, cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese. Drizzle with the lemon-herb dressing and sprinkle with fresh dill before serving.
