  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tbsp fresh lemon juice optional
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Cooking Instructions
  1. Pat the chicken thighs dry with paper towels and season generously with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, sear the chicken thighs for 5-7 minutes per side until golden brown and cooked through; then, remove from the skillet and set aside.
  3. Reduce heat to medium, add butter and minced garlic to the skillet, and sauté for 1 minute until fragrant.
  4. Stir in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan to deglaze, and bring the sauce to a simmer.
  5. Return the cooked chicken thighs to the skillet, spooning the garlic butter sauce over them. Cook for another 1-2 minutes to heat through.
  6. Garnish with fresh chopped parsley before serving hot.

Notes

For extra flavor, consider marinating the chicken thighs for 15-30 minutes before cooking. Always ensure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
