  • 250 g pasta
  • 200 ml heavy cream
  • 50 g sun-dried tomatoes chopped
  • 100 g spinach
  • 50 g Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 onion chopped
  • 100 ml chicken broth
  • 1 tablespoon olive oil
Seasoning
  • salt to taste
  • black pepper to taste
  • 0.5 teaspoon red pepper flakes optional

Method
 

Preparation
  1. Cook pasta according to package directions, then drain and set aside, reserving a bit of pasta water.
  2. In a large skillet, heat olive oil over medium heat and sauté chopped onion until softened, about 3-4 minutes.
  3. Add minced garlic and sun-dried tomatoes to the skillet, cooking for another 1-2 minutes until fragrant.
Cooking the Sauce
  1. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  2. Stir in the fresh spinach and cook until it wilts, approximately 2-3 minutes.
  3. Add the grated Parmesan cheese, stirring until melted and the sauce thickens slightly.
Combining and Serving
  1. Add the cooked pasta to the skillet with the sauce and toss to combine, ensuring all pasta is coated.
  2. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  3. Season with salt, black pepper, and red pepper flakes if desired, then serve immediately.

Notes

For an extra touch, you can add grilled chicken or shrimp to this pasta dish.
