Ingredients
  

  • 4 medium russet potatoes
  • 1 cup cottage cheese low-fat or full-fat
  • 2 tbsp butter or olive oil for healthier option
  • 1 clove garlic minced
  • 2 tbsp green onions chopped
  • Salt and pepper to taste
  • ½ cup shredded cheese cheddar or mozzarella
  • Fresh parsley for garnish

Instructions
 

  • Preheat the air fryer to 375°F (190°C).
  • Pierce potatoes with a fork and air fry for 20-25 minutes until tender.
  • Scoop out potato flesh and mix cottage cheese, butter, garlic, green onions, salt, and pepper.
  • Stuff the potato skins with the cottage cheese mixture and top with shredded cheese.
  • Air fry for an additional 5-7 minutes until golden and crispy.
  • Garnish with fresh parsley and enjoy!
