Ingredients

  • 🐔 Chicken Breast – 500g cooked and shredded
  • 🧑‍🍳 Greek Yogurt – 4 tablespoons substitute for mayonnaise for a lighter, healthier version
  • 🍛 Curry Powder – 2 teaspoons for that rich, aromatic flavor
  • 🍯 Honey – 1 tablespoon or maple syrup for a natural alternative
  • 🍋 Lemon Juice – 2 teaspoons for a refreshing zest
  • 🧄 Garlic – 1 clove minced
  • 🍅 Tomato Puree – 2 tablespoons adds depth and color
  • 🧂 Salt and Pepper – To taste
  • 🥚 Boiled Eggs – 2 chopped (optional)
  • 🍍 Pineapple – 1/2 cup chopped (optional, for a touch of sweetness)

Instructions

  • Step 1: Cook the Chicken Start by poaching or grilling the chicken breasts. Poaching them in gently simmering water for 15 minutes works well to retain moisture and tenderness. Once cooked, allow the chicken to cool and shred it into bite-sized pieces.
  • Step 2: Prepare the Dressing In a mixing bowl, combine Greek yogurt, curry powder, honey, lemon juice, and minced garlic. Stir until smooth. Add tomato puree and mix until fully combined. This dressing will coat the chicken beautifully.
  • Step 3: Combine Chicken and Dressing Once the chicken has cooled, add it to the prepared dressing and stir gently to coat every piece of chicken with the creamy curry sauce.
  • Step 4: Add Garnishes To complete the dish, fold in boiled eggs and pineapple for added flavor and texture. These ingredients add a creamy, tangy, and sweet balance to the dish.
  • Step 5: Chill and Serve Cover and refrigerate the dish for at least 1 hour to allow the flavors to meld together. Serve chilled as a salad topping,
