  • 2 cups chicken breast cooked and shredded
  • 1 cup wild rice
  • 6 cups chicken broth
  • 1 cup carrots chopped
  • 2 celery stalks chopped
  • 1 medium onion chopped
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation
  1. In a large pot, melt the butter over medium heat, then add the chopped carrots, celery, and onion and sauté until softened, about 5-7 minutes.
  2. Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth, bringing the mixture to a simmer.
  3. Add the wild rice, shredded chicken, salt, and pepper; reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is tender.
  4. Stir in the heavy cream and heat through for a few minutes, without boiling, then taste and adjust seasonings as needed before serving hot.

Notes

For extra flavor, you can add a bay leaf to the soup while it simmers and remove it before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
