- In a large pot or Dutch oven, melt butter and sauté chicken pieces until lightly browned. Add diced carrots, celery, and onion, cooking until softened.
- Stir in flour, then gradually pour in chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot. Season with salt and pepper.
- In a separate bowl, whisk together 2 cups of flour, baking powder, and salt. Add milk and melted butter, mixing until just combined to form a soft dough.
- Drop spoonfuls of the dumpling dough directly into the simmering broth. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Avoid lifting the lid during this time.
- Once dumplings are cooked, gently stir in fresh parsley. Ladle the chicken and dumplings into bowls and serve hot.
Notes
For extra flavor, consider adding a bay leaf to the broth while it simmers, removing it before serving.
