  • 2 lbs Chicken breast boneless, skinless, cut into 1-inch pieces
  • 6 cups Chicken broth low sodium
  • 2 Carrots medium, diced
  • 2 stalks Celery diced
  • 1 Onion medium, diced
  • 0.5 cup All-purpose flour
  • 0.25 cup Butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh parsley chopped (for garnish)
For the Dumplings
  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 0.75 cup Milk
  • 0.25 cup Butter melted

Method
 

Main Instructions
  1. In a large pot or Dutch oven, melt butter and sauté chicken pieces until lightly browned. Add diced carrots, celery, and onion, cooking until softened.
  2. Stir in flour, then gradually pour in chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot. Season with salt and pepper.
  3. In a separate bowl, whisk together 2 cups of flour, baking powder, and salt. Add milk and melted butter, mixing until just combined to form a soft dough.
  4. Drop spoonfuls of the dumpling dough directly into the simmering broth. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Avoid lifting the lid during this time.
  5. Once dumplings are cooked, gently stir in fresh parsley. Ladle the chicken and dumplings into bowls and serve hot.

Notes

For extra flavor, consider adding a bay leaf to the broth while it simmers, removing it before serving.
