Cajun Shrimp Pasta

  • 1 lb linguine
  • 1.5 lb shrimp peeled and devained
  • 12 oz andouille sausage sliced
  • 4 tbsp unsalted butter
  • 2 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup Parmesan cheese grated
  • 2 tbsp Cajun seasoning
  • salt to taste
  • black pepper to taste
  • 0.25 cup fresh parsley chopped for garnish

Method
 

Cooking Instructions
  1. Cook linguine according to package directions in a large pot of salted water. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Add sliced andouille sausage and cook until browned, then remove and set aside.
  3. Add shrimp to the same skillet and sprinkle with Cajun seasoning, salt, and pepper. Cook for 2-3 minutes per side until pink and cooked through, then remove and set aside.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant. Pour in heavy cream and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in grated Parmesan cheese until melted and the sauce has thickened. Add the cooked sausage, shrimp, and drained linguine to the skillet.
  6. Toss everything to combine, adding some reserved pasta water if the sauce is too thick. Garnish with fresh parsley and serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper with the Cajun seasoning. You can also substitute chicken or bell peppers for the sausage if desired.
