  • 2 cups milk whole or 2%
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation
  1. In a large pot, melt butter over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  3. Gradually whisk in the chicken or vegetable broth, ensuring no lumps. Bring the mixture to a simmer, then add the broccoli florets.
  4. Reduce heat, cover, and simmer for 10-15 minutes, or until broccoli is tender. Stir in the milk, salt, and pepper, and heat through but do not boil.
  5. Remove the pot from heat and stir in the shredded cheddar cheese until completely melted and smooth. Serve hot and enjoy!

Notes

For a thicker soup, you can blend a portion of the soup before adding the cheese. Garnish with extra shredded cheddar or croutons if desired.
