  • 2 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup milk
  • 1.5 cups cheddar cheese, shredded
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Cook the broccoli in chicken broth until tender, then set aside some florets and mash the rest.
  2. Melt butter in a pot, whisk in flour to create a roux, and cook for one minute.
  3. Gradually whisk in milk until smooth, then stir in the remaining chicken broth, salt, and pepper.
  4. Bring the mixture to a simmer, then reduce heat and slowly add shredded cheddar cheese, stirring until melted.
  5. Add the mashed and reserved broccoli back to the soup.
  6. Heat gently until warmed through, then serve immediately.

Notes

For a smoother soup, you can blend all the broccoli after cooking. Adjust seasoning to your taste.
