Tomato Soup Preparation
- Chop the tomatoes, onion, and mince the garlic. Sauté the onion and garlic in olive oil until softened, then add the chopped tomatoes, vegetable broth, salt, and pepper.
- Simmer the mixture for about 20 minutes, then blend until smooth using an immersion blender or a regular blender.
- Taste and adjust seasonings as needed. Keep warm while preparing the grilled cheese.
Grilled Cheese Preparation
- Butter one side of each slice of bread. Place cheese between two slices of unbuttered bread sides, ensuring the buttered sides are facing outwards.
- Cook the sandwiches in a pan over medium heat until golden brown and the cheese is melted and bubbly. This usually takes 3-5 minutes per side.
Serving
- Serve the hot tomato soup with the freshly made grilled cheese sandwiches. For an enhanced experience, try dipping the grilled cheese in the soup.
Notes
For extra flavor, roast the tomatoes before making the soup. A touch of cream can be added to the soup for a richer texture. Experiment with different cheese types for the grilled cheese.
