Preparation
- Preheat your oven to 400°F (200°C) and lightly grease an 8x8 inch baking pan. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the milk, egg, and vegetable oil until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined; be careful not to overmix, as lumps are acceptable.
Baking
- Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a golden brown color and a wooden skewer inserted into the center comes out clean.
Serving
- Once baked, remove the cornbread from the oven and allow it to cool in the pan for a few minutes before slicing and serving. Enjoy your warm, homemade cornbread!
Notes
For extra flavor, you can add 1/2 cup of shredded cheddar cheese or a few jalapeño slices to the batter. Serve warm with butter, honey, or a bowl of chili.
