Method
 

Preparation
  1. Place eggs in a single layer in a saucepan and cover with cold water by one inch. Bring water to a boil, then immediately remove from heat, cover, and let stand for 12 minutes.
  2. Drain the hot water and transfer the eggs to an ice bath to cool completely, about 5 minutes. Once cooled, carefully peel the eggs and cut them in half lengthwise.
  3. Gently scoop out the yolks and place them in a small bowl. Arrange the egg white halves on a serving platter.
Filling
  1. Mash the egg yolks with a fork until they are finely crumbled. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks.
  2. Mix all ingredients thoroughly until the filling is smooth and creamy. Taste and adjust seasonings as needed.
Assembly and Garnish
  1. Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with paprika for color and flavor.
  2. Garnish with fresh dill, chives, or bacon bits if desired. Serve immediately or refrigerate until ready to serve.

Notes

For an extra creamy filling, you can pass the mashed yolks through a fine-mesh sieve before mixing with other ingredients. For a spicy kick, add a dash of hot sauce or a pinch of cayenne pepper to the filling.
