Preparation
- Preheat your oven to 350°F (175°C) and line a 7-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
- In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Stir in the boiling water until the batter is smooth and thin.
Baking
- Divide the batter evenly among the 7 prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Ensure not to overmix the batter for tender cupcakes. The boiling water helps activate the cocoa and create a moist texture.
