Ingredients

Cabbage
  • 1 large head cabbage
  • 8 cups water
  • 1 teaspoon salt
Filling
  • 1 pound ground beef
  • 0.5 cup uncooked rice
  • 1 medium onion, chopped
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Sauce
  • 15 ounces tomato sauce
  • 14.5 ounces diced tomatoes
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 0.5 cup water

Equipment

  • Large pot
  • Large bowl
  • Baking dish or Dutch Oven

Method

Prepare Cabbage
  1. Carefully remove the core from the cabbage, then in a large pot, boil the whole cabbage in salted water for 10-15 minutes until the leaves are pliable.
  2. Drain the cabbage and carefully peel off the individual leaves; thicker veins can be trimmed for easier rolling.
Make Filling
  1. In a large bowl, combine ground beef, uncooked rice, chopped onion, egg, salt, and pepper; mix thoroughly until well combined.
Assemble Rolls
  1. Place a portion of the meat mixture at the stem end of each cabbage leaf, fold in the sides, and then roll tightly to form a compact roll.
  2. Repeat until all the filling and leaves are used, placing the rolls seam-side down in a large baking dish or Dutch oven.
Prepare Sauce and Cook
  1. In a separate bowl, whisk together tomato sauce, diced tomatoes, brown sugar, apple cider vinegar, and water to create the sauce.
  2. Pour the sauce evenly over the cabbage rolls, ensuring they are mostly covered.
Bake
  1. Cover the baking dish tightly with a lid or foil and bake at 350°F (175°C) for 1 to 1.5 hours, or until the cabbage is tender and the filling is cooked through.
  2. Serve hot and enjoy your homemade stuffed cabbage rolls!

Notes

For extra flavor, you can add some smoked paprika or a bay leaf to the sauce. Leftover cabbage rolls store well in the refrigerator for up to 3 days and can be frozen for longer storage.
