  • 4 large chicken breasts boneless, skinless
  • 0.5 cup all-purpose flour
  • 2 tbsp olive oil
  • 8 oz button mushrooms sliced
  • 0.5 cup Marsala wine
  • 0.5 cup chicken broth
  • 2 tbsp butter

Method
 

Preparation
  1. Pound chicken breasts to an even thickness, then dredge each piece in flour, shaking off any excess.
Cook Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Add floured chicken breasts and cook for 3-5 minutes per side until golden brown and cooked through, then remove from skillet and set aside.
Sauté Mushrooms
  1. In the same skillet, add sliced mushrooms and sauté for 5-7 minutes until they are tender and browned.
Deglaze and Simmer
  1. Pour Marsala wine into the skillet to deglaze, scraping up any browned bits from the bottom, then add chicken broth and bring the mixture to a simmer.
Finish and Serve
  1. Return chicken to the skillet, stir in butter until melted and sauce is slightly thickened, and serve immediately.
