Preparation
- Pound chicken breasts to an even thickness, then dredge each piece in flour, shaking off any excess.
Cook Chicken
- Heat olive oil in a large skillet over medium-high heat. Add floured chicken breasts and cook for 3-5 minutes per side until golden brown and cooked through, then remove from skillet and set aside.
Sauté Mushrooms
- In the same skillet, add sliced mushrooms and sauté for 5-7 minutes until they are tender and browned.
Deglaze and Simmer
- Pour Marsala wine into the skillet to deglaze, scraping up any browned bits from the bottom, then add chicken broth and bring the mixture to a simmer.
Finish and Serve
- Return chicken to the skillet, stir in butter until melted and sauce is slightly thickened, and serve immediately.
