Cooking Steps
- In a large pot, heat olive oil over medium heat. Add diced celery, carrots, and onion, then sauté until softened, about 5-7 minutes.
- Stir in minced garlic and cook for another minute until fragrant. Do not burn the garlic.
- Pour in chicken broth, then bring the mixture to a boil. Reduce heat and simmer for 10 minutes to allow the vegetables to tenderize.
- Add heavy cream, shredded cooked chicken, gnocchi, salt, pepper, and dried thyme to the pot. Stir well and simmer for another 5-7 minutes, or until the gnocchi are tender.
- Finally, stir in fresh spinach and cook until it just wilts, about 2-3 minutes. Serve hot and enjoy your Olive Garden-style Chicken Gnocchi Soup.
Notes
For extra flavor, you can use homemade chicken broth. Adjust seasoning to taste, and add a pinch of nutmeg for a warm, subtle flavor. This soup is best served fresh but reheats well on the stovetop.
