Preparation
- Wash and soak basmati rice for 30 minutes, then drain. Marinate chicken with yogurt, ginger-garlic paste, half of the biryani masala, and salt for at least an hour.
Cooking
- Heat ghee in a large pot and sauté sliced onions until golden brown. Add marinated chicken and cook until it changes color, then stir in chopped tomatoes and remaining biryani masala.
- Add soaked and drained rice to the chicken mixture, then pour in water and season with salt. Bring to a boil, then reduce heat, cover, and cook until the rice is 70% done.
- Layer with chopped mint and coriander leaves, green chilies, and saffron-infused milk. Cover tightly and cook on low heat (dum cooking) for 20-25 minutes until rice is fully cooked and flavors are melded.
Serving
- Gently fluff the biryani with a fork and serve hot with raita and salad.
Notes
For an extra fragrant biryani, add a few drops of kewra water or rose water during the dum cooking stage. Ensure the pot is sealed tightly to trap the steam effectively.
