Ingredients

Main Ingredients
  • 170 g unsalted butter, softened
  • 225 g all-purpose flour
  • 75 g granulated sugar

Equipment

  • Baking sheet
  • Parchment paper

Method

Preparation
  1. Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Gradually add the flour to the butter mixture, mixing until just combined and a soft dough forms.
  4. Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together.
  5. Roll out the dough to about 1/2 inch thickness and cut out 3 round cookies using a cookie cutter or the rim of a glass.
  6. Place the cut-out cookies onto the prepared baking sheet and prick each cookie several times with a fork.
Baking
  1. Bake for 18-20 minutes, or until the edges are lightly golden and the cookies are set.
Cooling
  1. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure your butter is at room temperature before creaming. Do not overmix the dough, as this can make the cookies tough. Shortbread cookies are delicious on their own, or can be served with a dusting of powdered sugar or a side of tea or coffee.
