Ingredients

Dough
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup dark brown sugar
  • 1/3 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Equipment

  • medium bowl
  • large bowl
  • whisk
  • electric mixer
  • plastic wrap
  • rolling pin
  • gingerbread man cookie cutter
  • baking sheet
  • parchment paper
  • wire rack

Method

Preparation
  1. Whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl; set aside.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the molasses, egg, and vanilla extract until well combined.
Dough
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  2. Divide the dough into three equal portions, flatten each into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out one chilled dough disk to about 1/4-inch thickness, then use a gingerbread man cookie cutter to cut out shapes.
  3. Place the cut-out cookies onto the prepared baking sheet and bake for 10-12 minutes, or until the edges are firm.
Cooling and Decorating
  1. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  2. Once completely cool, decorate your gingerbread cookies with icing and candies as desired.

Notes

For best results, make sure your butter is at room temperature before creaming. Chilling the dough is crucial for preventing the cookies from spreading too much during baking. You can use any cookie cutters you like, not just gingerbread men!
