Preparation
- Whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl; set aside.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

Dough
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
- Divide the dough into three equal portions, flatten each into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Baking
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out one chilled dough disk to about 1/4-inch thickness, then use a gingerbread man cookie cutter to cut out shapes.
- Place the cut-out cookies onto the prepared baking sheet and bake for 10-12 minutes, or until the edges are firm.
Cooling and Decorating
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once completely cool, decorate your gingerbread cookies with icing and candies as desired.
