  • 12 ounces fettuccine pasta
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • fresh parsley, chopped for garnish

Method
 

Instructions
  1. Cook the fettuccine pasta according to package directions until al dente, then drain and set aside.
  2. While pasta cooks, slice chicken breasts into thin strips. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, then remove chicken from skillet and set aside.
  3. Add minced garlic to the same skillet and sauté for 30 seconds until fragrant, then pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  4. Stir in the grated Parmesan cheese until melted and the sauce is smooth, then return the cooked chicken and pasta to the skillet, tossing to coat evenly.
  5. Season with salt and black pepper to taste, garnish with fresh parsley, and serve immediately.

Notes

For best results, use freshly grated Parmesan cheese. Adjust salt and pepper to your preference.
