  • 8 oz mushrooms sliced
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tsp Dijon mustard
  • 2 tbsp flour

Cooking Steps
  1. In a large skillet, melt butter over medium-high heat, then sear the beef strips in batches until browned and set aside.
  2. Add chopped onion to the skillet and sauté until softened, then add sliced mushrooms and cook until tender.
  3. Stir in flour and cook for one minute, then gradually whisk in beef broth and bring to a simmer.
  4. Reduce heat to low, return beef to the skillet, and stir in sour cream and Dijon mustard.
  5. Season with salt and pepper to taste, then simmer gently for 10-15 minutes, or until the sauce thickens and flavors meld.

Notes

For best results, do not overcrowd the pan when searing the beef; sear in batches if necessary. Serve over egg noodles or rice.
