Preparation
- Preheat your oven to 200°C (400°F) if making a roast, or prepare a large pot on the stovetop for soup. Chop all your chosen vegetables into bite-sized pieces and dice your lean protein.
- Toss the vegetables with olive oil, herbs, and spices.
- If making a roast, arrange vegetables and protein on a baking sheet. If making soup, begin by sautéing aromatic vegetables in the pot (e.g., onions, carrots, celery).
Cooking - Soup Variation
- Add protein, broth, diced tomatoes, and remaining vegetables to the pot. Bring to a simmer, then reduce heat and cook for 25-30 minutes, or until vegetables are tender.
- Stir in dark leafy greens during the last 5-10 minutes of cooking until wilted. Serve hot with cooked whole grains.
Cooking - Roast Variation
- Roast vegetables and protein for 30-40 minutes, or until vegetables are tender and slightly caramelized, and protein is cooked through.
