Main Ingredients
  • 1 whole turkey 12-14 pounds, thawed
  • 1/2 cup butter softened
  • 2 sprigs fresh rosemary chopped
  • 1 sprig fresh thyme chopped
  • 4 cloves garlic minced
  • 1 lemon quartered
  • 1 onion quartered
  • 4 cups chicken broth
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Equipment

  • large roasting pan
  • roasting rack
  • small bowl
  • meat thermometer
  • aluminum foil

Method

Preparation
  1. Preheat your oven to 450°F (230°C) and ensure the oven rack is in the lowest position.
  2. Remove giblets and neck from the turkey, then pat the turkey dry with paper towels.
Flavoring
  1. In a small bowl, mix softened butter with rosemary, thyme, minced garlic, salt, and pepper.
  2. Carefully spread the butter mixture under the turkey skin over the breast and thighs, then rub any remaining butter over the outside of the turkey.
Roasting
  1. Stuff the lemon and onion quarters into the turkey cavity and place the turkey on a roasting rack in a large roasting pan.
  2. Pour chicken broth into the bottom of the roasting pan.
  3. Roast the turkey at 450°F (230°C) for 30 minutes.
  4. Reduce the oven temperature to 350°F (175°C) and continue roasting for 3 to 3.5 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  5. Baste the turkey every 30-45 minutes with the pan juices.
Resting
  1. Once cooked, remove the turkey from the oven, tent it loosely with foil, and let it rest for 20-30 minutes before carving.

Notes

For extra crispy skin, pat the turkey very dry before applying the butter mixture. You can also add other aromatics like carrots and celery to the roasting pan for more flavorful drippings.
